In the Horchaterías (milk bars, ice cream parlors) the Horchata de Chufa is freshly prepared and served ice-cold. Often, warm fartons, an oblong pastry to dunk, are offered.
Just as there are pretzel stands in major German cities, mobile stalls are being set up on many street corners in Valencia, where you can enjoy the freshly-made Horchata from beakers. It is also possible to buy the tubers in small cloth bags, with the help of which you can prepare the drink at home.

- Dried tigernuts: 250 grams.
- Very cold, almost frozen water: 1 liter
- Sugar: 150 grams (half of the earth almond weight).
- Optional: lemon or a cinnamon pod.
1. Tigernuts must be soaked in water for 24 to 36 hours to regain their moisture. If the water becomes cloudy, it must be changed.
2. We now use a quarter of the water (250 ml) to mince the tigernuts with the blender.
3. This is the milky paste we receive. If you want to add cinnamon or lemon, this is the right moment. If you do not drink the tigernut milk immediately, you have to keep it in the fridge now.
4. Then the liquid must be sieved. For this we need a solid sieve and something for pressing, since we have to press the liquid out of the paste firmly.
5. The remaining paste can no longer be used and can therefore be transported to the bio-bin.
6. After sieving, add the remaining water (750 ml) and the sugar.
7. Mix the mixture with the blender again.
8. This is the result: the horchata or tigernut milk, a delicious cold drink.
