A very elegant cheese, presents a cut and compact texture of straw yellow color. The nose is nice. In the mouth its texture is oily and its flavor is long, powerful but balanced, with saline bottoms, reminiscent of sheep's milk and nuts.
It remains cured for 9 months and is carefully matured, like an ancient gastronomic tradition, an art and a way of life. This cheese represents our belief that "natural food tastes better".
Qualities that have been awarded in the 2012 edition of the World Cheese Awards with a gold medal in the category of cured cheese of sheep's milk and with the highest award "Super Gold" at the World Cheese Awards 2015.
